This recipe is a fun twist on Taco’s using our Teriyaki Turkey Fillets as the protein.  Both refreshing and crunchy with flavors of sweet and tangy, this recipe is sure to please as an appetizer, light lunch, or a main dish.


Ingredients

Coleslaw

  • 1 Cup Green Cabbage, Shredded
  • 1 Cup Red Cabbage, Shredded
  • 1 Medium Carrot, Shredded
  • 1/4 Cup Onion, Chopped

Coleslaw Dressing

  • 1/2 Cup Mayo
  • 1 Tsp White Sugar
  • 1 Whole Lime, Zested and Juiced
  • 1 Tsp Vinegar
  • 1 Tbsp Horseradish
  • Salt and Pepper to Taste

Other Ingredients 

  • 1 pkg Hayter’s Farm Teriyaki Turkey Breast Fillet
  • 1 pkg Small Tortilla Shells
  • 1 Pomegranate, Seeded (Optional)
  • A handful of Cilantro (Optional)
  • Toasted Walnuts (Optional)
  • Goat Cheese (Optional)

 


Method of Preparation

Prep Your Coleslaw

  1. Mix your red cabbage, green cabbage, carrot and onion together in a bowl.
  2. Mix your mayo, white sugar, lime (zest and juice), vinegar and horseradish in a bowl. Add salt and pepper to taste.
  3. Put your coleslaw dressing on your coleslaw and mix well. Place your coleslaw in the fridge to chill.

Prep Other Toppings

  1. Seed your pomegranate. Set aside.
  2. Toast your walnuts. Set aside.
  3. Wash and de-stem your cilantro. Set Aside.
  4. Crumble goat cheese and set back in the fridge.

Cook your Teriyaki Turkey Fillet  

1. In a cast iron skillet, heat some oil on medium-low heat and place your fillet in the middle of the pan. Cook for 5 minutes on each side until browned and internal temperature reaches a minimum of 165F. Once done, set aside to rest for 5-10 mins for juices to absorb.
2. Once rested and cooled enough to touch, chop your turkey into little chunks.

Assemble Your Taco’s

1. We like to add 1-2 spoonful’s of coleslaw, 1 spoonful of turkey, and a sprinkle each of pomegranate seeds, walnuts, and goat cheese. Top with a couple pieces of cilantro.


Tips

When cooking your turkey, low and slow is the best way to ensure a juicy outcome. Our cooking time may vary from yours based on pans used and stovetop temperature differences – always ensure internal temperature of your turkey reaches 165F.
