A classic that everyone needs on their menu rotation. Braised Turkey Thigh Flatbread is great as an appetizer, a compliment to your charcuterie board, or, switch out the flatbread for a pizza crust to enjoy as a main dish. There is flexibility in the ingredients that you can use to top your flatbread –  swap out and/or add what you have on hand, or, to suit your taste. We recommend you make extra of this braised thigh and freeze in portions to be used for quick dinners later on such as pulled turkey sandwiches, nachos, wraps and more!


Ingredients

Braised Turkey Thigh Rub

  • 1 x pkg Hayter’s Farm Bone-In Turkey Thigh
  • 1/2 tsp Cumin
  • 1 tsp Smoked Paprika
  • 1/2 tsp Cayenne Pepper
  • 1 1/2 tsp Brown Sugar
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper

Sauce for Turkey Thighs

  • 1/2 Cup Ketchup
  • 2 Tbsp Brown Sugar
  • 1 Cup Stock of Choice (We Used Turkey Bone Broth)
  • 1 1/2 Tbsp Dijon Mustard
  • 1 Tbsp Worcestershire
  • 1 Tbsp Apple Cider Vinegar

Other Ingredients

  • 1 x Medium Onion
  • 1/4 Cup Roasted Red Pepper
  • 1/4 Cup Caramelized Onion
  • 1/4 Cup Sautéed Mushroom
  • 4 Tbsp Kalamata Olives
  • 1 1/2 Cups Cheese of Choice
  • 4-6 pcs Flatbread of Choice, or, Make Some Homemade Dough/Naan
  • Sauce of Choice for Base (We Love Caesar Dressing)
  • 1 Cup Arugula
  • Balsamic Glaze (Optional)


Method of Preparation

Braised Turkey Thigh

  1. Turn on oven to 280F.
  2. If needed, take the skin off of your turkey thigh.
  3. Mix the spices for the rub, and liberally apply to all sides of your turkey thigh.
  4. Mix all of the ingredients for your sauce and set aside.
  5. Roughly chop medium onion and set in the bottom of a Dutch oven.
  6. Place your seasoned turkey thighs on top of the onion, then pour the sauce on top.
  7. Place the lid on your Dutch oven and place in oven for approx 3.5 hours. Once 3.5 hours has passed, check on your thighs – they should be fall-off-the-bone. If they aren’t, replace lid and put back in the oven for 30 mins, then check again.
  8. Once done, take out the bones and discard (or save for a Bone Broth). Take two forks and shred your turkey. Once shredded, you could add some of the sauce to your turkey if you feel it’s necessary.

Assembling Your Flatbread

  1. Preheat your oven to 350F.
  2. Take your flatbread and add your sauce of choice.
  3. Add your toppings of choice.
  4. Finish with sprinkling your cheese of choice on top – less is more in this case.
  5. Bake in the preheated oven until edges are golden brown – roughly 7-10 minutes.
  6. Once done, sprinkle some arugula over the flatbread and drizzle with balsamic glaze (optional).
  7. Cut flatbread into manageable pieces for your crowd.
