At this time of year soup can be a wonderful comfort food. Besides that, it is a one pot meal chocked full of  nutrients as well. Turkey is a good source of selenium. Selenium is a trace mineral that is essential to good health.  The antioxidant properties  help prevent cellular damage from free radicals. Free radicals contribute to the development of chronic diseases such as cancer and heart disease.


Ingredients

*6 cups, low sodium chicken broth
2 cups water
3 large stalks celery cut up small
2 large carrots, grated
1 medium onion, cut up

1 Tablespoon minced garlic, or 1 clove, pressed or chopped fine

1 cup cut up cooked Hayter’s Turkey

1 cup long grain white or wild rice, raw NOT COOKED

3 cranks of fresh black pepper

1 Bay leaf (optional)

 


Method of Preparation

Put all ingredients in a large soup pot or dutch oven, bring to a boil.

Reduce heat and simmer for about 40 minutes or until the vegetables are soft.


Tips

*To make it a cream soup make these variations

*Use 4 cups milk

*2 cups low sodium chicken broth

3 Tablespoons tapioca pudding (to thicken)

Rest ingredients the same

Simmer a bit longer 50 minutes to 1 hour.
